For anyone interested this recipe can also be done all in an Instant Pot.
1. Cook rice and water on Porridge setting for 20 mins
2. Quick release
3. Turn on Saute feature,
4. Add milk, sugar, keep mixing for 20 mins
5. Turn off Instant Pot, add two whole beaten eggs while mixing quickly
6. Pour into serving dish, garnish with cinnamon and let settle for a few minutes before serving
Just made this, and I am in heaven. A taste of my childhood! I substituted soya milk for the whole milk and 1/2 cup of honey for the white sugar. It turned out fantastic. Than you Eddie for posting so many wonderful and authentic recipes.
Arborio rice is high in amylopectin, a starch present in rice. Because it undergoes less milling than ordinary long-grain rice, arborio retains more of its natural starch content and you get a creamier result.
In some cases people do, and for some recipes it's a good idea, but not for this one Maria, I would not wash it for rice pudding because it will end up creamier.
Yes Teresa, you simmer the rice in water for 20 minutes and then another 20 minutes once you add the milk.

I like this recipe but mine was very liquidy with the 4 cups of liquid if I had followed the time directions. I had to add another almost 40 minutes of coming time to make sure the rice was fully cooked and not too liquidy. Also, I think one cup of sugar is good if you like it extremely sweet, otherwise maybe 1/2 cup then add more if needed. I will definitely make this again and try to tweak it a bit.
