On this video, Nancy from DIYwithnancyg, shows you step by step how to make Azorean Chouriço (Portuguese chouriço).
Ingredients:
- 200 lbs of pork shoulder
- 25 grams of garlic powder
- 9 heads of fresh garlic (chopped)
- 64 ounces of red hot pepper sauce (pimenta moida)
- 1.5 litres of red wine
- 1 kg of salt
- 600 grams of sweet paprika
- 75 grams of ground black pepper
- Tripe/Casings
- String to tie the chouriços

Together with my two boys, used to help my in-laws every year with making chouricos in the Fall up at the cottage. They were from the island of Graciosa. Sadly they passed away more than 20 years ago and regretfully, so did the tradition of making them. I have saved this recipe and video and will attempt to make some this year as your video brought back so many memories.Thank you so much for sharing your tradition with us.

Hey Ed, Is it 9 heads or 9 cloves of garlic for the chouriço recipe? 9 heads seems to be excessive

I used to help my grandparents to make presunto. and I made one when i was much younger and it was really good. but I forgot the processes. can you do a video or a receita please.
