How to Make Portuguese Alheira Sausage

Today we are making the Portuguese alheira sausage. A Sausage that literally saved lives.


Ingredients:


For the stock

  • 1200 g beef and beef bones
  • 700 g chicken thighs on the bone
  • 4 garlic cloves smashed
  • ½ chopped onion
  • 2 celery stalks chopped
  • 1 large carrot chopped
  • 1 bay leaf
  • 1/4 bunch fresh parsley chopped
  • 2 tsp pepper corn
  • 2 tbsp tomato paste
  • 2 liters water you need enough to cover the ingredients by at least an inch.
For the sausage

  • 800 g cooked tender beef and chicken
  • 200 g sour dough bread cut up into cubes
  • 14 g salt
  • 3 g black pepper
  • 3 g paprika
  • 2 g red chili flakes
  • 2 g cayenne pepper add more or less (to taste)
  • 10 g minced garlic
  • 45 ml olive oil
  • 5 g fresh parsley
  • 1 liter reserved stock (divided) you might need a little more or a little less depending on how you like the consistency
