Cheesy Baked Tuna and Potatoes Recipe


Ingredients
4 medium potatoes (1.5 lbs / 700g)3 cans of tuna (5 oz / 140g each)2 medium onions3.5 oz (100g) thick-cut bacon strips3 sprigs of parsley6 pitted and sliced olivesA handful of shredded mozzarella (½ cup / 50g)6 eggsOlive oil, as neededSalt and black pepper, to taste
Preparation

  1. Bring a pot of salted water to a boil. 
  2. Peel and slice the potatoes into thin rounds, then cook them until tender (about 10 minutes).
  3. Meanwhile, heat a frying pan with a drizzle of olive oil. 
  4. Sauté the onions (thinly sliced into half-moons) and bacon strips until golden and fragrant.
  5. Preheat the oven to 350°F (180°C).
  6. Drain the potatoes and spread them evenly in a baking dish.
  7. Mix the drained tuna and chopped parsley into the bacon and onion mixture. 
  8. Remove from heat and spread it evenly over the potatoes.
  9. In a bowl, beat the eggs with a pinch of salt and black pepper, and pour the mixture over the potatoes and tuna.
  10. Sprinkle the shredded mozzarella and the sliced olives on top.
  11. Bake for about 30 minutes.

Note:

For a golden, crispy top, turn on the broiler for the last few minutes.
