1/2 cup of chopped almonds1 and 1/2 cups of grated carrots1 and 1/4 cups of orange pulp1/2 cup of brown sugar4 tablespoons of olive oil3 large eggs1 cup of flour1/3 cup of whole wheat flour1 teaspoon of baking powder * Get Portuguese ingredients & stuff Get Portuguese ingredients and other stuff at Amazon.com

  1. Preheat the oven to 170ºC or 340ºF.
  2. Grease a small cake pan with a little olive oil, cover with parchment paper and grease the paper with olive oil as well.
  3. Place the carrots in a bowl and add the orange pulp, the brown sugar, the olive oil and the eggs.
  4. Beat everything very well with the help of a mixer.
  5. Then add the flours, baking powder, chopped almonds and beat again until all ingredients are well blended.
  6. Pour the batter into the pan and bake for 35 to 40 minutes.
  7. When cool, unmold and serve with sliced ​​oranges.
