This delicious and healthy Portuguese cod & chick pea salad (salada de bacalhau com grão de bico) is very easy and quick to make.

Ingredients

1 lb of shredded and de-booned cod1 can of chick peas5 eggs medium eggs1 onion, chopped1 clove of garlic, choppedOlive oil (to taste)Parsley (to taste), choppedOlives (to taste)1/2 red bell pepper, cut in small cubes

Get Portuguese ingredients

Directions

  1. Cook the cod in water, once cooler, shred and remove any bones.
  2. Boil the 5 eggs, once cooler, remove the shells and cut into half moons.
  3. In a large bowl, add the shredded cod, the chick peas, onion, olives, garlic and parsley, pepper, the boiled eggs and drizzle generously with olive oil.
