1 cup rice2 3⁄4 cups water1 1⁄2 tablespoons butter1 teaspoon salt1 dash black pepper1 dash garlic powder1 teaspoon paprika1 teaspoon ketchup1 small onion, finely chopped1 (10 ounce) can sliced mushrooms or 1 (10 ounce) can baby clams, rinsed1⁄4 cup bell pepper, diced (any colour) (optional)

Directions
- Combine all of the ingredients in a large microwavable casserole dish with a lid. Cook in the microwave on high for 18 minutes, or until the rice is tender and the water is absorbed. Fluff with a fork and serve.
