1 cup of rice2 and 3/4 cups of water1 and 1/2 tablespoons of butter1 teaspoon of salt1/4 teaspoon of black pepper1/2 teaspoon of garlic powder1 teaspoon of paprika1 teaspoon of tomato paste1 small onion, finely chopped1 (10 ounce) can of sliced mushrooms or 1 (10 ounce) can of baby clams, rinsed1⁄4 cup bell pepper, diced (any colour) (optional)

  1. Combine all of the ingredients in a large microwavable casserole dish with a lid.
  2. Cook in the microwave on high for 16  to 18 minutes, or until the rice is tender and the water is absorbed.
  3. Fluff with a fork and serve.
