Portuguese Pineapple Pudding Recipe

Once you start eating this Portuguese pineapple pudding (pudim de ananás), you won't be able to stop.

Ingredients

5 eggs3 cups of condensed milk1 can of pineapple slices (15oz)1 tablespoon of cornstarchLiquid caramel (to taste)

Directions

  1. Preheat the oven to 180ºC or 350ºF.
  2. Mince the pineapple slices (without the juice).
  3. In a bowl combine all the ingredients and beat well until smooth.
  4. Pour into a pudding pan previously coated with the liquid caramel.
  5. Bake for about 50 minutes in a water bath (place the pan in a tray of water).
  6. Let it cool in the pan, once cold, unmold it and put it on a serving plate.

Zandra, you can go with either, although the sweetened one would work better with this recipe, but everyone is different and you should do it to taste.

Hi Lucy, I don't recommend the spring form because of the water bath, but you can use a bundt cake pan for it or a rectangular loaf pan.
