Cream of Green Bean Soup Recipe

This healthy cream of green bean soup recipe (receita de creme de feijão verde) is very tasty and easy to make.

Ingredients

1/2 lb of green beans1 small carrotPumpkin (to taste)1 and 1/2 onions3 medium potatoes1 lb of zucchiniSalt (to taste)

Get Portuguese ingredients

Directions

  1. Peel and chop all the vegetables into small pieces.
  2. Cook the vegetables in a pan covered with water (just enough to cover) for about 20 to 25 minutes.
  3. In the midst of cooking add the green beans and season with salt, add more water if necessary.
  4. When the vegetables are cooked, turn off the heat, drizzle with olive oil and using a hand blender, blend everything.
