Instructions

  1. Heat a pan with the olive oil, add the onion and let it fry a little.
  2. Add the bay leaf and garlic, let it cook a little and add the tomato paste and the chopped tomato.
  3. Add the ​carrots and the octopus cooking broth and let it simmer for about 20 minutes.
  4. Add the beans, chouriço ​​and octopus cut into pieces.
  5. Season with salt and pepper. If necessary add more broth.
  6. Cook over a medium heat for about 10 minutes, stirring occasionally.
  7. Serve sprinkled with chopped coriander or parsley (to taste).
