Paula's Portuguese Sour Soup Recipe


This delicious Portuguese sour soup (sopa de azedo) has been a tradition in my family ever since I can remember, enjoy.

Ingredients

1 onion, chopped 2 cloves of garlic, chopped 3 tablespoons of olive oil 1 teaspoon of paprika 1 tablespoon of tomato paste 1/2 chouriço, cut into 4 pieces 1 can of red beans 2 big potatoes, cut into cubes2 handfuls of rigatoni pasta Salt (to taste)Pepper (to taste)1 and 1/2 liters of waterVinegar

Get Portuguese ingredients

Instructions

  1. In a pan over medium heat,  cook the onions and garlic in the olive oil for about 3 to 4 minutes.
  2. Add the tomato paste, paprika, beans, salt, pepper, the chourico and stir.
  3. Add the water, stir and bring to a boil, than add the potatoes and the pasta and cook for another 10 minutes.
  4. When serving,  add one tablespoon of vinegar to each plate and stir.

Loide, it is really good, try adding a teaspoon of regular white vinegar on the serving dish and stir a bit.
