Ingredients

Medley:1 cup of assorted Olives green and kalameta¼ cup each red, orange and yellow bell pepper, julienned1 cup grape tomatoes (whole)4 oz Feta cheese, cubed2 oz cheese curds, optional½ an cucumber (seeded and chopped)Lemon vinaigrette:½ cup olive oil4 tbls red wine vinegar1 tbls balsamic vinegar1 tbls fresh parsley choppedJuice of ½ lemon½ teaspoon of lemon zestSalt & pepper (to taste)

Instructions

  1. Place all the ingredients for the medley in a bowl.
  2. Prepare the vinaigrette, by whisking all the ingredients together, pour it over the medley and stir it.
  3. Cover and allow to sit on counter for up to two hours, stirring occasionally.
