Ingredients
Medley:1 cup of assorted Olives green and kalameta¼ cup each red, orange and yellow bell pepper, julienned1 cup grape tomatoes (whole)4 oz Feta cheese, cubed2 oz cheese curds, optional½ an cucumber (seeded and chopped)Lemon vinaigrette:½ cup olive oil4 tbls red wine vinegar1 tbls balsamic vinegar1 tbls fresh parsley choppedJuice of ½ lemon½ teaspoon of lemon zestSalt & pepper (to taste)

Preparation
- Place all the ingredients for the medley in a bowl.
- Prepare the vinaigrette, by whisking all the ingredients together, pour it over the medley and stir it.
- Cover and allow to sit on counter for up to two hours, stirring occasionally.
