Portuguese grilled sardines are a traditional and popular dish in Portugal, especially during the summer months. The sardines are typically caught in the Atlantic Ocean and grilled over an open flame, often on a charcoal grill.

To prepare the sardines, they are cleaned and gutted, then seasoned with coarse salt and sometimes a little bit of olive oil. They are then grilled for just a few minutes on each side until they are crispy on the outside and juicy on the inside.

Sardines are often served on a bed of roasted peppers and accompanied by a side of boiled potatoes or bread. This dish is commonly enjoyed with a glass of cold white wine or a refreshing beer.

Directions

  1. Preheat the grill to high heat.
  2. In a small bowl, mix together the olive oil and minced garlic.
  3. Season the sardines with salt and pepper, then brush them generously with the garlic oil.
  4. Place the sardines on the grill and cook for 3-4 minutes per side, until they are browned and crispy.
  5. Serve the grilled sardines with a squeeze of fresh lemon juice, a sprinkle of chopped parsley, and additional salt and pepper to taste.
  6. Enjoy with a side of crusty bread and a glass of chilled Vinho Verde or another Portuguese white wine.

Note: This recipe can also be made with other small, whole fish such as mackerel or anchovies.
