Ingredients

1 whole chicken2 to 3 tablespoons of Piri Piri spice blend1/4 cup of olive oil1 lemon4 garlic clovesSalt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. The chicken should be washed and dried with paper towels.
  3. In a small bowl, mix together the Piri Piri spice blend, olive oil, salt, and pepper.
  4. Peel the garlic cloves and cut the lemon into wedges.
  5. Put the chicken in a baking or roasting pan.
  6. Brush the chicken with the spice blend mixture, making sure to coat it well on all sides.
  7. Place the lemon wedges and garlic cloves around the chicken.
  8. Roast the chicken for about 45-50 minutes or until the internal temperature of the chicken reaches 165°F (75°C).
  9. Once the chicken is cooked, remove it from the oven and let it rest for 10-15 minutes before carving and serving.

Yes you can baste with the juices at the bottom of the pan from the garlic and lemon, you can also serve it with a side dish.
