Ingredients
1 1/2 cups of white rice1 chouriço sausage, sliced into rounds1/2 onion, diced2 cloves of garlic, minced2 cups of chicken broth1/2 green bell pepper, chopped1/2 red bell pepper, chopped1/2 cup of diced tomatoes1/4 cup of chopped parsley1/4 teaspoon of paprikaSalt and pepper to tasteOlive oil

Directions
- Put the rice aside after giving it a cold water rinse.
- Over medium heat, warm up some olive oil in a large pot. Sliced chouriço sausage should be added and fried until browned. Sausage should be taken out of the saucepan and put aside.
- Add the diced onion and minced garlic, red and green bell peppers to the pot and sauté until the onion is translucent.
- Add the rice to the pot and stir to combine with the onion, garlic and peppers. Cook for 2-3 minutes, stirring occasionally.
- Add the chicken broth, diced tomatoes, paprika, salt, and salt and pepper (to taste) to the pot. Stir well to combine.
- A tight-fitting lid should be placed on the pot after lowering the heat after bringing the mixture to a boil.
- Until the liquid has been absorbed and the rice is soft, simmer the rice for 18 to 20 minutes.
- After turning off the heat, let the pot rest for five to ten minutes.
- Fluff the rice with a fork and stir in the chopped parsley and the browned chouriço sausage.
