Directions

  1. Soak the beans in water overnight. Drain and rinse before using.
  2. In a large pot, add the bacon, pork ribs, and sausages. Put a lid on it and boil the water. For 30 minutes, simmer over a lower heat. While reserving the broth, remove the meats from the pot.
  3. Olive oil should be heated in the same saucepan at a medium heat. Add the onion and garlic and sauté for about 5 minutes, or until soft.
  4. Add the bay leaves, thyme, paprika, salt, and black pepper and stir well.
  5. Add the soaked beans and enough reserved broth to cover them. Boil for a while, then turn the heat down and simmer for a full hour.
  6. Cut the cooked bacon, pork ribs, and sausage into bite-size pieces and add them to the pot. Continue simmering for another 30 minutes, adding more broth if necessary.
  7. Serve hot with fresh parsley as garnish.
