Linguiça is a type of smoked sausage that is commonly used in these regions and is similar to chorizo or pepperoni in texture and flavor.

To make scrambled eggs with linguiça, start by slicing the linguiça into small pieces and frying it in a pan until it is crispy. Then, whisk some eggs in a bowl and pour them into the pan with the linguiça. Cook the eggs over medium heat, stirring occasionally, until they are scrambled and cooked through.

You can also add some diced onions, peppers, or tomatoes to the eggs to give them some extra flavor and texture. Serve the scrambled eggs with linguiça hot, garnished with some chopped parsley or cilantro, and accompanied by toasted bread or some other breakfast staple.

Directions

  1. Crack the eggs into a bowl and whisk together with milk, salt, and black pepper until well combined.
  2. Over medium-high heat, heat the olive oil in a big skillet. Add the linguiça, onion, garlic, and red bell pepper, and sauté until the linguiça is browned and the vegetables are tender, about 5-7 minutes.
  3. Pour the egg mixture in after lowering the heat to medium-low. Use a spatula to gently stir the eggs until they start to set.
  4. When the eggs are about halfway cooked, sprinkle the shredded cheddar cheese over the top. Continue to stir until the cheese is melted and the eggs are cooked to your liking.
  5. Serve hot, garnished with fresh parsley.
