4 large eggs1/4 cup milk1/4 teaspoon salt1/4 teaspoon black pepper1 tablespoon olive oil1/2 cup linguiça, sliced1 clove of garlic2 tablespoons chopped onion2 tablespoons chopped red bell pepper1/4 cup shredded cheddar cheese

Directions

  1. Crack the eggs into a bowl and whisk together with milk, salt, and black pepper until well combined.
  2. Over medium-high heat, heat the olive oil in a big skillet. Add the linguiça, onion, garlic, and red bell pepper, and sauté until the linguiça is browned and the vegetables are tender, about 5-7 minutes.
  3. Pour the egg mixture in after lowering the heat to medium-low. Use a spatula to gently stir the eggs until they start to set.
  4. When the eggs are about halfway cooked, sprinkle the shredded cheddar cheese over the top. Continue to stir until the cheese is melted and the eggs are cooked to your liking.
  5. Serve hot, garnished with fresh parsley.
