Instructions

  1. Crack the eggs into a bowl and whisk together with milk, salt, and black pepper until well combined.
  2. Over medium-high heat, heat the olive oil in a big skillet. Add the linguiça, onion, garlic, and red bell pepper, and sauté until the linguiça is browned and the vegetables are tender, about 5-7 minutes.
  3. Pour the egg mixture in after lowering the heat to medium-low. Use a spatula to gently stir the eggs until they start to set.
  4. When the eggs are about halfway cooked, sprinkle the shredded cheddar cheese over the top. Continue to stir until the cheese is melted and the eggs are cooked to your liking.
  5. Serve hot, garnished with fresh parsley.
