Directions

  1. Warm up the olive oil in a big pot over medium heat.
  2. Add onion and garlic to the pot and sauté until softened, about 3-4 minutes.
  3. Add chopped carrots, potatoes, green beans, and cabbage to the pot and stir well.
  4. Pour in the can of diced tomatoes and broth. Add the bay leaf, paprika, salt, and pepper to the pot and stir to combine.
  5. Bring the soup to a boil, then reduce heat to low and simmer for about 30 minutes or until vegetables are tender.
  6. Take the bay leaf out of the pot and throw it away.
  7. Serve the soup hot and enjoy!
