To prepare the dish, start by soaking wooden skewers in water for at least 30 minutes to prevent them from burning during grilling. Meanwhile, cut the chouriço, pork, and green bell pepper into small pieces of roughly the same size.

Thread the pieces of meat and pepper alternately onto the skewers, making sure to leave a little space between each piece to ensure even cooking. You can marinate the meat and peppers before grilling, but it's not necessary.

Medium-high heat should be applied to a grill or pan. Grill the kebabs, turning them occasionally, until the meat and peppers are cooked through and slightly charred, about 8-10 minutes.

Directions

  1. Preheat grill to medium-high heat.
  2. In a large bowl, whisk together olive oil, minced garlic, smoked paprika, red pepper flakes, and salt.
  3. Add the pork, chouriço, and green bell peppers to the bowl with the marinade. Toss everything together until coated evenly.
  4. Thread the pork, chouriço, and green bell peppers onto the soaked wooden skewers, alternating between the ingredients.
  5. Place the skewers on the preheated grill and cook for 12-15 minutes, turning occasionally, until the pork is cooked through and the vegetables are tender.
  6. Serve the kebabs hot, garnished with fresh parsley or cilantro if desired.
