Instructions
This recipe makes 24 cookies.
- A baking sheet should be lined with parchment paper and the oven should be preheated to 350°F (175°C).
- In a large bowl, mix together the almond flour, sugar, and salt.
- The egg whites should be whisked until firm peaks form in a different bowl.
- Fold the egg whites into the almond flour mixture, along with the almond extract, until everything is well combined.
- Scoop out about 1 tablespoon of dough and roll it into a ball with your hands.
- The balls should be spaced about 2 inches apart on the prepared baking sheet. If desired, press a sliced almond onto the top of each cookie for decoration.
- The edges should be slightly browned after baking for 12 to 15 minutes.
- On the baking sheet, the cookies should cool for five minutes before being transferred to a wire rack to finish cooling.

Took almost 20 minutes. Could still have been in for a couple of more minutes. Taste is good. As a diabetic I changed the white sugar for monk fruit sugar which probably changed the consistency some what. Will make them again.
