2 cups almond flour1/2 cup granulated sugar1/4 teaspoon salt2 egg whites1 teaspoon almond extractSliced almonds for decoration (optional)

Instructions

This recipe makes 24 cookies.

  1. A baking sheet should be lined with parchment paper and the oven should be preheated to 350°F (175°C).
  2. In a large bowl, mix together the almond flour, sugar, and salt.
  3. The egg whites should be whisked until firm peaks form in a different bowl.
  4. Fold the egg whites into the almond flour mixture, along with the almond extract, until everything is well combined.
  5. Scoop out about 1 tablespoon of dough and roll it into a ball with your hands.
  6. The balls should be spaced about 2 inches apart on the prepared baking sheet. If desired, press a sliced almond onto the top of each cookie for decoration.
  7. The edges should be slightly browned after baking for 12 to 15 minutes.
  8. On the baking sheet, the cookies should cool for five minutes before being transferred to a wire rack to finish cooling.

Took almost 20 minutes. Could still have been in for a couple of more minutes. Taste is good. As a diabetic I changed the white sugar for monk fruit sugar which probably changed the consistency some what. Will make them again.
