Directions

  1. In a large bowl, whisk together the olive oil, garlic, smoked paprika, cumin, salt, black pepper, and cayenne pepper.
  2. Add the chicken to the bowl and toss to coat with the spice mixture. Cover the bowl with plastic wrap and refrigerate for 2 hours, or overnight.
  3. In a small bowl, whisk together the lemon juice, orange juice, white wine vinegar, and piri piri sauce.
  4. Preheat a grill to medium-high heat.
  5. Remove the chicken from the marinade and grill for 20-25 minutes, turning occasionally, until the internal temperature of the chicken reaches 165°F.
  6. During the last 5 minutes of grilling, baste the chicken with the piri piri sauce mixture.
  7. Before serving, take the chicken off the grill and allow it to rest for five to ten minutes.
