The cake's dark appearance, resulting from the caramelized sugars in the honey, is complemented by aromatic citrus zest. A slice of Bolo de Mel is a delightful taste of Portuguese heritage.

Directions

  1. Preheat the Oven: Preheat your oven to 180°C (350°F). Grease a bundt pan or a round cake tin with butter and lightly dust it with flour.

  2. Mix Dry Ingredients: In a large mixing bowl, combine the flour, baking soda, cinnamon, cloves, nutmeg, and salt. Mix well and set aside.

  3. Melt Butter with Honey: In a saucepan, melt the butter on low heat and add the honey. Stir until well combined.

  4. Whisk Eggs and Sugar: In a separate bowl, whisk the eggs and sugar until light and fluffy.

  5. Combine Mixtures: Slowly pour the melted butter and honey mixture into the eggs and sugar, whisking continuously. Once combined, fold in the dry ingredients, mixing until you get a smooth batter.

  6. Add Zests and Optional Ingredients: Stir in the orange and lemon zests. If you're using walnuts, almonds, or raisins, fold them into the batter at this stage.

  7. Bake the Cake: Pour the batter into the prepared bundt pan or cake tin. Bake in the preheated oven for about 40-45 minutes or until a toothpick inserted into the center comes out clean.

  8. Cool and Serve: Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes. Afterward, transfer it to a wire rack to cool completely.

  9. Serve: Once cooled, transfer the cake to a serving dish, slice, and enjoy!
