5 eggs50 ml of milkGrated cheese, to taste12 green olives with pimentosFreshly chopped chives, to taste1/2 chopped onion1 chourico, cut into small cubes3 mushrooms, slicedOlive oil, to tastePepper, to taste

Preparation
- Start by sautéing the onion, chourico and mushrooms in a pan with a drizzle of olive oil.
- Once the mushrooms are cooked, remove everything and set aside.
- In a deep bowl, whisk the eggs together with the milk, the grated cheese, chopped chives, and olives sliced into rounds.
- Next, combine the mushrooms and onion mix to the eggs and place them in a baking dish.
- Bake in the oven at 200ºC or 392ºF for about 20 minutes.
