Ingredients

1 tablespoon olive oil1/2 medium onion, chopped3 garlic cloves, minced1 tablespoon tomato paste3 cups water1 1/2 cups rice, uncooked2 bay leaves1/2 tablespoon smoked paprika1 teaspoon ground black pepper1/2 teaspoon salt1 (15 ounce can) kidney beans, drained and rinsed

Get Portuguese ingredients

Preparation

  1. In a medium saucepan over medium-high heat, add olive oil.
  2. Once heated, add onions and cook until softened and lightly browned, about 3-4 minutes.
  3. Add garlic and cook for another 2 minutes, or until fragrant.
  4. Add tomato paste and scrape the bottom of the pan using a wooden spoon, loosening up any browned bits from the bottom.
  5. Add water, rice, bay leaves, and spices to the pan and bring to boil.
  6. Reduce to simmer and cook until rice is soft and water is absorbed, about 10 minutes.
  7. Add kidney beans and cook until heated through, about 1-2 minutes.
  8. Fluff with fork before serving.
