Ingredients

1 Large Portuguese Chourico or Linguica Sausage cut into 1/4 inch slices 2 large cans of Cooked Red Kidney Beans1 small chopped onion2 medium chopped garlic cloves1 bay leaf1/2 tsp paprika1 – 2 tsp of Piri Piri or Hot Sauce1/2 cup water1/2 cup red wine1 cup of crushed red tomatoes or tomato sauce2 tbsp Olive Oil2 tbsp parsley flakes *optional

Get Portuguese ingredients

Instructions

  1. In a large deep saucepan on medium heat, saute the onions, garlic and bay leaf in the olive oil for 1-2 minutes until translucent.
  2. Add the sliced Chourico and let it cook for about 2 minutes until slightly browned. Add the remaining ingredients except the parsley flakes and let it come to a boil. Reduce heat and simmer on low for 15-20 minutes stirring on occasion.
  3. You will notice the chili is slightly watery. To thicken, simply mash about 1 cup of the beans with a fork, stir back into the chili and let it cook until it reaches your desired consistency. Cover and set aside. The chili will thicken as it cools.
  4. Remove Bay Leaf before serving. Store in the refrigerator.
