1 puff pastry base1 small can of white beans (280 grams) (approximately 10 ounces)350 grams of sugar (approximately 1.75 cups)80 grams of flour (approximately 2/3 cup)80 grams of margarine (approximately 5.6 tablespoons)5 eggs100 grams of shredded coconut (approximately 1 cup)Sugar for sprinkling

Preparation

  1. Preheat the oven to 350°F (180°C).
  2. Roll out the puff pastry and place it in a tart pan, pricking the base with a fork and set aside.
  3. Drain and rinse the white beans from the can.
  4. Drain again and puree the beans.
  5. In a bowl, mix the bean puree with all the other ingredients.
  6. Beat very well until the mixture is completely homogeneous.
  7. Pour the mixture over the tart base, sprinkle with sugar, and bake for about 35 minutes or until golden.
