Valenciana Rice

Ingredients
2 cups of rice4 cups of chicken or vegetable broth1 chicken breast, cut into cubes7 oz (200g) pork, cut into cubes7 oz (200g) chouriço, sliced1 onion, chopped2 cloves of garlic, minced1 red bell pepper, sliced1 green bell pepper, sliced1 cup of frozen or fresh peas1 tomato, chopped1/2 cup of olive oil1/2 teaspoon of saffron or paprikaSalt and pepper to taste7 oz (200g) shrimp, peeled and cleaned7 oz (200g) mussels, cleaned7 oz (200g) clams, cleanedChopped parsley for garnish

Preparation
- In a large pan, heat the olive oil over medium heat.
- Add the chicken, pork, and chouriço.
- Cook until the meats are golden and cooked through, about 5-7 minutes.
- Add the onion and garlic, sautéing until the onion is soft and translucent, about 3-4 minutes.
- Add the bell peppers, peas, and tomato to the pan.
- Cook for another 2-3 minutes, stirring occasionally.
- Add the rice to the pan, mixing well to ensure the rice is fully coated with the olive oil and ingredients.
- Pour the chicken or vegetable broth into the pan and add the saffron or paprika.
- Season with salt and pepper to taste.
- Stir well to ensure all ingredients are evenly distributed.
- Reduce the heat to medium-low and cook the rice without stirring for about 15 minutes.
- Add the shrimp, mussels, and clams on top of the rice, distributing them evenly.
- Continue cooking for another 5-10 minutes, or until the rice is tender, the shrimp are cooked, and the mussels and clams have opened.
- Remove the pan from heat and let it rest for 5 minutes before serving.
- Sprinkle with chopped parsley for garnish and enjoy.
