Preparation
- Cut the chicken breast into small cubes or thin strips.
- Also, finely shred the cabbage and slice the onion.
- Bring a pot of salted water to a boil.
- Once boiling, add the rice and cook until done.
- Drain, rinse with cold water, drain again, and set aside.
- Meanwhile, heat a frying pan over medium heat with a drizzle of peanut or olive oil.
- Once hot, add the onion and let it brown. Add the chicken cubes and chopped garlic, if needed, add a little more oil.
- Once the chicken starts browning, add the peanuts and cabbage.
- Stir well and cook just until the cabbage starts to soften.
- Remove from the heat and mix gently with the rice.
