2 tbsp (30g) butter3.5 oz (100g) 70% dark chocolate2 teaspoons instant coffee4 eggs3.5 fl oz (100ml) 35% whipping cream1/3 cup (80g) sugar

Preparation

  1. Melt the butter with the chocolate.
  2. Add the coffee and mix well.
  3. Stir in the egg yolks, incorporate well, and refrigerate.
  4. In a separate bowl, beat the egg whites until stiff peaks form, gradually adding half of the sugar.
  5. Whip the heavy cream with the remaining sugar until soft peaks form.
  6. Gently fold the beaten egg whites into the chocolate-coffee mixture.
  7. Carefully incorporate the whipped cream.
  8. Divide the mousse into serving cups and refrigerate for at least 4 hours or overnight.
