Ingredients

½ cup of olive oil3 garlic cloves minced1 small chouriço diced1 green pepper diced1 large tomato, seeds removed and diced1 bay leaf6 oz tomato paste3 cups of white wine1 lb of mussels1 lb of shrimp1 sprig of fresh parsleySea salt and fresh ground pepper (to taste)

Get Portuguese ingredients

Preparation

  1. Line a large heavy pan or clay pot with olive oil.
  2. Add minced garlic, chouriço, diced green pepper and large tomato and simmer until slightly browned.
  3. Add bay leaf, tomato paste and wine and stir on medium heat until your kitchen smells amazing and the sauce is blended well.
  4. Add Mussels and Shrimp and cover pot.
  5. Cook on medium for 10 minutes.
  6. Remove any unopened Mussels.
  7. Sprinkle with parsley and salt and pepper and stir until well blended

Really good. I substituted Polish sausage, which is what I had, but added hot chile-garlic paste, Cajun seasoning, and lots of smoked paprika to try to approximate the seasonings in Portuguese chorizo. Because I was using shucked, frozen mussels which were cooked, I added them at the end as the shrimp was about done and continued simmering just until everything was pleasantly hot. I served with crusty French baguette and Italian green beans.

Little changes but was delicious - used 2 cups of wine, added onion, doubled garlic, used a tin of chopped toms and doubled mussels

It was good, but I think it needed tweaking. I’d love to know what others have done. I think it needed onions, less tomato paste, less wine. More garlic! 😀 Any thoughts?
