A fresh and delicious tomato salad that goes well with goat cheese or cured meat.

Ingredients

4 tomatoes One small red onion, finely choppedFresh summer herbs (Oregano, basil, mint etc)Sea saltOlive oilRed wine vinegarA pinch of sugar

Directions

  • Take the tomatoes out of the fridge at least an hour before making (or ideally don’t store them in the fridge at all!)
  • Cut tomatoes into small pieces.
  • Mix the tomatoes and all ingredients above in a bowl, and then leave them to settle at room temperature for at least 30 minutes.
  • Serve with a strong goat’s cheese, slices of cured meat, and crusty bread to mop up the delicious juices.

Appreciate the tips about letting the tomatoes come to room temperature and letting the salad sit for half an hour. This is like the salads served in the Algarve at restaurants where the locals eat. Thank you.
