A fresh and delicious tomato salad that goes well with goat cheese or cured meat.

Ingredients

4 tomatoes One small red onion, finely choppedFresh summer herbs (Oregano, basil, mint etc)Sea saltOlive oilRed wine vinegarA pinch of sugar

Get Portuguese ingredients

Instructions

  • Take the tomatoes out of the fridge at least an hour before making (or ideally don’t store them in the fridge at all!)
  • Cut tomatoes into small pieces.
  • Mix the tomatoes and all ingredients above in a bowl, and then leave them to settle at room temperature for at least 30 minutes.
  • Serve with a strong goat’s cheese, slices of cured meat, and crusty bread to mop up the delicious juices.
