1 quail1 tbs smoked paprika1 tsp ground cumin1 tsp chilli flakes1 tsp cayenne pepper2 tbs olive oilSmall handful mixed herbs, roughly chopped

Get Portuguese ingredients

Instructions

  1. Preheat the oven to 220°C.
  2. Rub the quail with spices and oil. Heat a pan over high heat and sear the quail on all sides. Place the pan in the oven and cook quail for a further 8-10 minutes or until cooked. Remove the quail from the pan and allow to rest.
  3. Serve while still hot.
