Ingredients

1 pound (lb) of parisienne potatoes (small potato balls), peeled1⁄2 cup of olive oil1 tablespoon of garlic salt2 teaspoons of paprika2 tablespoons of dried oregano1 tablespoon of roasted garlic and red pepper spice mix2 tablespoons of olive oil

Get Portuguese ingredients

Preparation

  1. Combine the potatoes and spices with the half cup of olive oil.
  2. Mix everything so all potatoes are coated.
  3. Place in the fridge for about 4 hours so it marinates.
  4. Preheat the oven to 180°C or  350°F.
  5. In a glass baking dish, pour 2 tablespoons of olive oil and spread it well on bottom of the dish.
  6. Place the marinated potatoes on bottom of dish in a single row.
  7. Bake for about 1 hour and flip the potatoes half way through cooking.

This recipe is amazing! I made it for 35 people - used russet potatoes and a very large pan and cooked them on the bbq. Received rave reviews and there were hardly any left overs!!! This is a keeper!

You can save a lot of time if you boil the potatoes so that they are cooked through but not mushy. I usually use cubed potato and that takes about 12 min of boiling before being drained and the spices added. Then you can roast them until you like the crispiness or crust.

These should work really well in our air fryer ( most things do!). I used to make Parisienne potatoes years ago using a special tool which would cut the small spheres from larger potatoes. Cubes would definitely be much easier!
