Parisienne potatoes are small, round potatoes that have been scooped into balls using a melon baller or parisienne scoop. The potatoes are then usually cooked in butter or oil until they are crispy on the outside and tender on the inside. They are a classic French potato dish and are often served as a side dish or as part of a more elaborate potato dish. Parisienne potatoes can be seasoned with herbs, garlic, or other spices to add flavor, and they can be served with a variety of sauces or dips.


Ingredients

1 pound (lb) of parisienne potatoes (small potato balls), peeled1⁄2 cup of olive oil1 tablespoon of garlic salt2 teaspoons of paprika2 tablespoons of dried oregano1 tablespoon of roasted garlic and red pepper spice mix2 tablespoons of olive oil

Directions

  1. Combine the potatoes and spices with the half cup of olive oil.
  2. Mix everything so all potatoes are coated.
  3. Place in the fridge for about 4 hours so it marinates.
  4. Preheat the oven to 180°C or  350°F.
  5. In a glass baking dish, pour 2 tablespoons of olive oil and spread it well on bottom of the dish.
  6. Place the marinated potatoes on bottom of dish in a single row.
  7. Bake for about 1 hour and flip the potatoes half way through cooking.

You can save a lot of time if you boil the potatoes so that they are cooked through but not mushy. I usually use cubed potato and that takes about 12 min of boiling before being drained and the spices added. Then you can roast them until you like the crispiness or crust.

These should work really well in our air fryer ( most things do!). I used to make Parisienne potatoes years ago using a special tool which would cut the small spheres from larger potatoes. Cubes would definitely be much easier!

What are the best potatoes to use

Anna, you can use any potatoes but white russets work well, what we do here at home is we cut the potatoes into small cubes (about an inch each), we don't always buy the small round potatoes because most super markets only have them canned and it can get expensive.

Something you buy Maria, you should be able to find it at a major grocer, but if you don't you can get it online.
