Ingredients
6 oz of Portuguese spicy sausage (chouriço or linguiça)2 tablespoons of olive oil10 large eggsCilantro or parsley (for garnish)Salt (to taste)

Directions
- Chop or slice the chouriço or linguiça (sausage) and cook in the olive oil in a nonstick skillet over medium heat, until browned or for about 5 minutes.
- Whisk the eggs together in a bowl, season with salt and whisk a little more, add to the skillet with the chouriço and stir.
- Cook, stirring, until the eggs are scrambled and set, about 5 minutes.
- Garnish with parsley or cilantro and serve while hot.

I make this a with a twist ... I fry up some potatoes, and when they are almost done I add Chorico and Linguica both, cut long ways into half then into slices. I add green peppers and onions, a touch of salt and pepper, and then scramble the eggs into it. My family LOVES it. I also do it with left over meats from Folar de Chaves which includes ham and marinated pork for our clan. Always a family favorite!!!
