Ingredients
6 oz of Portuguese spicy sausage (chouriço or linguiça)2 tablespoons of olive oil10 large eggsCilantro or parsley (for garnish)Salt (to taste)

Directions
  1.  Chop the chouriço or linguiça (sausage) and cook in the olive oil in a nonstick skillet over medium heat, until browned or for about 5 minutes.
  2. Whisk the eggs together in a bowl, season with salt and whisk a little more, add to the skillet with the chourico and stir.
  3. Cook, stirring, until the eggs are scrambled and set, about 5 minutes.
  4. Garnish with parsley or cilantro and serve while hot.
