Ingredients

6 oz of Portuguese spicy sausage (chouriço or linguiça)2 tablespoons of olive oil10 large eggsCilantro or parsley (for garnish)Salt (to taste)

Get Portuguese ingredients

Instructions

  1.  Chop or slice the chouriço or linguiça (sausage) and cook in the olive oil in a nonstick skillet over medium heat, until browned or for about 5 minutes.
  2. Whisk the eggs together in a bowl, season with salt and whisk a little more, add to the skillet with the chouriço and stir.
  3. Cook, stirring, until the eggs are scrambled and set, about 5 minutes.
  4. Garnish with parsley or cilantro and serve while hot.

I make this a with a twist ... I fry up some potatoes, and when they are almost done I add Chorico and Linguica both, cut long ways into half then into slices. I add green peppers and onions, a touch of salt and pepper, and then scramble the eggs into it. My family LOVES it. I also do it with left over meats from Folar de Chaves which includes ham and marinated pork for our clan. Always a family favorite!!!
