6 oz of Portuguese spicy sausage (chouriço or linguiça)2 tablespoons of olive oil10 large eggsCilantro or parsley (for garnish)Salt (to taste)

- Chop the chouriço or linguiça (sausage) and cook in the olive oil in a nonstick skillet over medium heat, until browned or for about 5 minutes.
- Whisk the eggs together in a bowl, season with salt and whisk a little more, add to the skillet with the chourico and stir.
- Cook, stirring, until the eggs are scrambled and set, about 5 minutes.
- Garnish with parsley or cilantro and serve while hot.
