Ingredients

3 tablespoons pf butter3 tablespoons of olive oil1 1⁄2 lbs of new potatoes, sliced into 1/4 inch thick rounds1⁄2 teaspoon of salt1 tablespoon of finely chopped parsleyFresh ground black pepper

Get Portuguese ingredients

Directions

  1. In a heavy 10-12 inch skillet, melt the butter and olive oil over medium heat.
  2. When the foam begins to subside, add the potatoes.
  3. Turn them frequently with a metal spatula, cook for 15 minutes or until they are tender and golden brown.
  4. Season with salt and black pepper, transfer to a heated bowl or platter, sprinkle with parsley and serve at once.

It is much easier to do these if you bake the potatoes in the microwave ahead of time and allow them to cool.
