Portuguese Roasted Garlic Potatoes Recipe

This simple recipe for Portuguese roasted garlic and thyme potatoes (batatas assadas a murro com alho e tomilho) never fails.

Ingredients

10 medium sized good quality potatoes5 cloves of garlic1 teaspoon of dried thymeCoarse salt (to taste)Olive oil (to taste)

Get Portuguese ingredients Get Portuguese ingredients and other stuff from Amazon.com

Directions

  1. Cook the potatoes with the peel in salt water.
  2. Once cooked, drain and give them a slight "punch" with the hand.
  3. Put the potatoes in a baking dish, drizzle them with olive oil and season with coarse salt, dry thyme and the garlic (crushed).
  4. Bake at 180ºC or 350ºF until crisp and golden.
