This Portuguese Shrimp Spaghetti Recipe features succulent prawns sautéed in a rich base of olive oil, garlic, and white wine. Ingredients

10 medium shrimp1/2 red pepper cut in strips2 garlic cloves3 tablespoons of olive oil2 tablespoons of tomato pasteParsley (to taste)Chives (to taste)Piri piri sauce (to taste)1/2 cube of seafood stock (broth)1/4 cup of white wineParmesan cheese (to taste)1 pack of spaghettiSalt (to taste)Butter (to taste)

Directions

  1. Place the shrimp in a bowl and drizzle with a portion of the white wine to assist in thawing.
  2. Peel the shrimp carefully and set aside.
  3. Boil a large pot of water and season generously with salt and a knob of butter.
  4. Cook the spaghetti according to the package directions until al dente.
  5. Combine the garlic, olive oil, and the seafood stock cube in a large frying pan over medium heat.
  6. Sauté the mixture until the garlic is lightly golden and fragrant.
  7. Stir in the red pepper strips, peeled shrimp, parsley, chives, piri piri sauce, and tomato paste.
  8. Pour in the remaining white wine and simmer the sauce for the duration of the pasta's cooking time, allowing the shrimp to turn pink and opaque.
  9. Drain the cooked spaghetti thoroughly.
  10. Transfer the pasta into the frying pan with the shrimp and sauce.
  11. Toss the ingredients together vigorously to ensure every strand of spaghetti is coated.
  12. Remove from heat immediately to maintain the tender texture of the seafood.
  13. Garnish with grated Parmesan cheese and serve hot.
