Portuguese Roasted Pork Shank, also known as "perna de porco assada à portuguesa" in Portuguese, is a traditional dish in Portuguese cuisine. It is typically made using a whole pork shank, which is marinated in a flavorful mixture of herbs and spices before being slow-roasted in the oven.

The marinade used for Portuguese Roasted Pork Shank typically includes ingredients such as garlic, paprika, bay leaves, white wine, and olive oil. The pork shank is first rubbed with this mixture and then left to marinate for several hours, or even overnight, to allow the flavors to penetrate the meat.

Once the pork shank is marinated, it is placed in a roasting pan and slow-roasted in the oven until it is tender and juicy. The skin of the pork shank is typically scored before roasting to create a crispy, flavorful crust.

Portuguese Roasted Pork Shank is often served with roasted potatoes and vegetables, as well as a rich, flavorful sauce made from the pan drippings. It is a delicious and hearty dish that is perfect for a special occasion or a cozy family meal.
