Ingredients
1 fresh pineapple, peeledOne teaspoon of cinnamon powder2 tablespoons of anis (Portuguese liquor), use can also use sambucaOrange zest (to taste)1 teaspoon of grated ginger1 tablespoon of honey

Directions
- Preheat the oven to 180ºC or 350ºF.
- Place the pineapple in a rectangular baking dish.
- In a bowl, mix all the ingredients and spread over the pineapple.
- Bake the pineapple until golden on all sides.
Note:
Pineapple has vitamin A, B1, B6, C, iron, magnesium and fiber, it is diuretic and contains very few calories (less than 160 in a 100 gram slice), in addition the pineapple also aids digestion and improves circulation.

PS to my earlier comment: Great memories of my folks and I home-making anis, maracujá, and other liqueurs from little bottles of extract we used to get at Bettencourt Pharmacy on Nash Road in New Bedford. Great to serve to family and friends around the holidays. Cheers!

I like to roast pineapple on a spit over the pit at the annual Madeira Feast in New Bedford. I've used cinnamon, and rum instead of anis/buca. I'll definitely try adding honey and ginger next time - sounds great. Here's hoping the Feast is back on again in '22. Cheers!
