Ingredients

1/2 lb of red chili peppers, washed and chopped1 tablespoon of coarse sea salt1/2 tablespoon of red wine vinegar1 tablespoon of olive oil1 jar for storing it

Get Portuguese ingredients

Preparation

  1. Place the chopped peppers and salt in a blender and blend until it is smooth and of even consistency.
  2. Place the mixture in a saucepan and let it cook on medium heat for 3 to 4 minutes.
  3. Stir in the vinegar and olive oil well and then pour into the jar for storage.
  4. Place it the refrigerator and use it as you need.

The authentic pimenta moida also has minced garlic added. I am from the Acores and we do not cook the pimenta but we add lots of salt and let it sit for a few days with only the salt and garlic. We then jar it.
